Our Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside.


We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.


These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.


Tasting Notes

The nose
Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.

The taste.
Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.

The finish.
Ginger spices a touch of almond and earthiness.

DOUBLE BARREL BUCK

INGREDIENTS:

  • 50ML OF DOUBLE BARREL IRISH WHISKEY
  • 10ML OF SIMPLE SYRUP
  • 30ML OF FRESH LIME JUICE
  • 3 DASHES OF BITTERS
  • GINGER BEER

GARNISH: A FRESH LIME WEDGE


INSTRUCTIONS:

  1. Pour the whiskey, simple syrup and freshly squeezed lime juice into an ice filled highball glass.
  2. Top with ginger beer.
  3. Add three dashes of bitters and garnish with a lime wedge.
