This June, we want to send you and a friend, foraging in the hills around Glendalough with our botanical forager, Geraldine Kavanagh.
On this trip you will learn how to identify and sustainably harvest edible flowers, wild fruit & greens. Geraldine will offer helpful tips on how to use what you forage in your kitchen, or how to preserve it for later use.
Register your interest using the form below, and we will be in touch if you have been chosen for this unique adventure.
Glendalough Distillery are one of the few distilleries in the world to employ a full-time forager.
Geraldine devotes hours each day to wandering Wicklow’s bountiful natural forests and valleys to find the most flavourful botanicals possible.
What she sustainably picks goes fresh (never dried) to the distillery within hours of foraging. Those wild botanicals are painstakingly slow-distilled to tease out their delicate flavours, in very small batches of less than 250 litres. This brings the flavour of Glendalough’s Gin to a whole other level.
Here’s a video showing what Geraldine and distiller Rowdy Rooney do to make this globally award winning Gin.
